My Favorite Summer Drink
Every summer I get pretty addicted to a certain drink. Last year it was ice water with random fruits and veggies in it (pineapple or cucumber, etc). This year I got a bit more fancy. It’s a beefed up Mojito, just without the rum.
The Recipe
1 Tablespoon (or so) of Lime Juice
A Dash of Raw Sugar
1/4 Cup of Pomegranate Juice
5-10 Mint Leaves torn up
Shake the above ingredients in a drink shaker with an ice cube or two. Feel free to toss some fresh lime wedges in there or a little more sugar if you like it sweeter. I’ve also been playing with different varieties of mint leaves. So far sweet mint is my favorite but orange mint has been nice too.
Pour the mixture into a glass and top with a few more ice cubes. Fill the rest of the glass with sparkling water. We’ve had flavored water on hand so I’ve tried this with both pomegranate flavored and lime flavored, both is great.
Add a straw and drink.
To make this into a Mojito just add a shot of rum to the drink shaker. I’ll probably continue to play with the flavors, substituting the pomegranate for other fruit juices and purees. The thing that makes this drink so great is the mint and the lime and the bubbles of the sparkling water. It’s SO refreshing. Makes you want to sit in a rocking chair on the front porch.
